Make table unit next to grill station. Ambient air temperature was 49°. Raw beef burger patties 48°-50°. Chili in reach in cooler 55°-80°. was made around 1:00 corrective action had manager stir. Re temped food tempted at 60°. Went over proper cooling procedures and suggested cooled methods to manager.
