Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Cheesecake and sauces in the 3 - door prep cooler were found at 43-45F
Correction: Maintain cold potentially hazardous foods at or below 41°F. The operator cleaned the evaporator and adjusted the cooler. A reduction in temperature was noted at the end of this inspection.
Critical: FOOD-CONTACT SURFACES AND UTENSILS (corrected on site) Observation: The dishwashing machine was not providing any sanitizing residual in the final rinse cycle.
Correction: Repair the dishwashing machine to provide 50 ppm chlorine residual in the final rinse cycle. The operator ran the priming pump and the next cycle of the machine produced a final rinse with 50 ppm chlorine.
CONSUMER ADVISORY Observation: The menu statement has a reminder that eating undercooked items is an increased health risk. The menu does not disclose which menu items are served undercooked.
Correction: Provide a written consumer advisory that includes both a disclosure and a reminder statement. For example, place an asterisk next to the steak and chop section on the menu that leads to the footnote that states "Steaks and chops ordered rare, medium rare, or pink in the middle may be undercooked. Whether dining out or preparing food at home, consuming undercooked meats, poultry, seafood, fish, or eggs may increase your risk of foodeborne illness.
