For example, for hamburgers and steaks that are cooked to the consumer's liking, provide a symbol next to these items on the menu that leads to a footnote that states "Hamburgers and steaks ordered rare, medium rare, or pink in the middle might be undercooked. Consuming undercooked meats may increase your risk of foodeborne illness.

Observation: The mechanical dishwasher is not sanitizing the food equipment. The gauge does not register 180F final rinse water. The 160F thermolabel does not indicate 160F at the equipment surface.
Correction: Repair the dishwasher so that it shows 180 to 195F water in the final rinse and so it meets 160F on the untensil surface as indicated by the thermolabel. The operator set up the three compartment sink with a chlorine bleach water solution (100 ppm) at the time of this inspection and will sanitize all equipment manually until the dishwasher is repaired. Observation: The bar's ice bin drain is not maintained in good repair. Slime is blocking the drain and the waste water is overflowing into a bus tub below the drain.
