Observation: There is debris on the bottom of the scrapper bins in the bakery area and also the bins holding ladles, spatulas, tongs, etc in the back loading area.

- UTENSILS, EQUIPMENT AND LINENS - AIR-DRYING REQUIRED
Observation: Clean utensils are being dried with a cloth towel after being washed and sanitized in the dish machine. Clean knife in bakery area is being sprayed with sanitizer solution and then towel dried.
