FOOD CONTACT SURFACES - SOILED Observation: Mold was noted on the inside components of the ice machine.
Correction: Maintain food contact surfaces in a clean condition. Clean and sanitize these areas as necessary to prevent the growth of bacteria.
HAND DRYING PROVISION (corrected on site) Observation: The hand towel dispenser at the kitchen handwashing sink was not operating properly.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER Observation: Wiping cloth used for wiping counters stored in a chlorine bleach sanitizing solution concentration of greater than 200ppm.
Correction: Cloths used for wiping counters shall be stored in a chlorine sanitizing solution concentration of 50-100ppm.
FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR Observation: Various boxes of food are being stored on the floor in the walk- freezer.
Correction: Store all food items 6 inches above the floor.
NON-FOOD CONTACT SURFACES - CLEAN Observation: Non-food contact surfaces of the ventilation hood and grills are soiled with grease. The handle of the pre-wash sprayer is covered with food residue.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
