Observation: Taco meat was improperly reheated. The taco meat was observed at 124°F. The manager stated they were in the process of reheating with the steam table and more than 2 hours had passed. During the inspection the manager reheated the taco meat to 195°F.
Correction: Adjust procedures and methods to properly reheat food. Discussed that all leftovers shall be reheated to 165°F within 2 hours.
