CERTIFIED FOOD MANAGER – REQUIREMENT Observation: There is no Wisconsin Certified Food Manager for this establishment.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment. The owners are planning on taking the class together in November. Information will be provided.
VENTILATION HOOD SYSTEM - ADEQUACY Observation: The two broasters in the kitchen are not adequately covered by the current ventilation hood system.
Correction: Provide additional ventilation hoods or devices to prevent grease and condensation from collecting on walls and ceilings. Contact the department of safety and proferssional services for requirments on plan review and installation.
WAREWASHING EQUIPMENT - CLEANING FREQUENCY - AT LEAST EVERY 24 HOURS Observation: The bar sinks and their components are not cleaned at least every 24 hours.
Correction: Clean warewashing machine and components or the compartments of warewashing sinks at least every 24 hours.
NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY Observation: The cooler handles and the equipment under the ventilation hood are not cleaned on a frequent basis.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
