TIME AS A PUBLIC HEALTH CONTROL - PLAN APPROVAL AND PROPER METHODS Observation: No written approved plan exists for using time as a control. Some foods were outside of temperature control at this inspection: meat gravy 113F, cheese >41F The opeartor stated that the service periord is less than four hours and any food left over is discarded.
Correction: Time can be used as the control measure for potentially hazardous foods if a written plan exists instructing that foods may not be out for more than four hours and are discarded at the end of the breakfast service period.
THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE Observation: A thermometer was not found in the carriage house refrigerator.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device. Correct By: 29-Jul-2015

Critical: PHF/TCS, COLD HOLDING Observation: The following foods at the breakfast buffet did not meet the required cold holding temperature. The operator stated that the foods are put out on ice at 7AM and the breakfast service is over at 10AM.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Alternatively the operator may hold potentially hazardous foods at any temperature if the operator creates a written plan in which employees are trained that foods that are stored above 41F may be stored at any temperture only if consumed or discarded within four hours.
