Observation: Foods stored in the top of front prep cooler is cold held at 43-49°F. Sour cream, 43F, red salsa, 45F, pico de gallo, 49F. Sour cream stored in the bottom of the Continental brand cooler was 43F. Manager immediately turned down thermostat and put of new pico and sour cream. Sour cream source walkin cooler was holding properly cold, 37F. A 7 day temperature log was provided to continue montioring this unit to ensure proper cold holding, 41F or less is maintained.
Correction: Maintain cold potentially hazardous foods at or below 41°F
- CERTIFIED FOOD MANAGER – REQUIREMENT
Observation: There is no Wisconsin Certified Food Manager for this establishment. Several employees had Serv Safe certificates. Submit at least 1 certificate to obtain WI CFM, application provided.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 90 days.
