- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The backsplash wall behind the newly installed 3 compartment sinks in the laundry room is exposed plywood. Finish surface with smooth, nonabsorbant material. Compliance will be confirmed at next routine inspection.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.

- Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
Observation: The EcoSan Liquid Sanitizer is not being used according to EPA registered label use instructions and is at 0 PPM. 3 cycles were run and sanitizer pump was primed but no sanitizer was detected. A manual spray solution was prepared on-site and will be used to spray on utensils and equipment after dish machine and allowed to air dry until repairs are complete.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
- HANDWASHING FACILITIES - NUMBERS AND CAPACITIES
Observation: Handwashing sink not provided in breakfast prep-laundry room. Owner will install a dedicated handwashing sink for breakfast prep staff use within 30 days. Staff will use breakfast service room handwashing sink until permanent sink is installed
Correction: Install an approved handwashing sink. Correct By: 15-Jul-2015
