Critical: PHF/TCS, COLD HOLDING Observation: The upright cooler in the laundry area has an ambient temperature of 44-49°F. Milk, cream cheese, and hard boiled eggs are stored in this cooler.
Correction: Service the cooler to ensure it is holding food at or below 41F. Temporarily relocate food to the upright cooler in the kitchen until this cooler can be serviced. Correct By: 19-Nov-2014
Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site) Observation: The Hobart dishmachine is not dispensing a detectable concentration of EcoSan chlorinated sanitizer.
Correction: Service the dishmachine to provide proper sanitizer concentration at 50ppm. Manually sanitize all food equipment and utensils until the machine can be serviced. Correct By: 19-Nov-2014
