    Observation: There is no Wisconsin Certified Food Manager for this establishment. An employee completed a ServSafe course and exam last year, however, the employee is not found in the Wisconsin CFM database.
    Correction: Complete the provided application and submit it to the State to obtain the Wisconsin Certified Food Manager certifcate. Post the state certificate in the food establishment within 90 days. Correct By: 21-Mar-2016

    Observation: The upright cooler in the laundry area has an ambient temperature of 44-49°F. Milk, cream cheese, and hard boiled eggs are stored in this cooler.
    Correction: Service the cooler to ensure it is holding food at or below 41F. Temporarily relocate food to the upright cooler in the kitchen until this cooler can be serviced. Correct By: 19-Nov-2014

    Observation: The Hobart dishmachine is not dispensing a detectable concentration of EcoSan chlorinated sanitizer.
    Correction: Service the dishmachine to provide proper sanitizer concentration at 50ppm. Manually sanitize all food equipment and utensils until the machine can be serviced. Correct By: 19-Nov-2014
