    Observation: Food in the Trauslen reach-in cooler was observed at 50-53°F. Food in the mid cooler - top reach-in was observed at 42-43F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Service was called for both coolers during the inspection. TCS food in the Trauslen reach-in cooler was discarded during the inspection. Correct By: 11-Dec-2014

    Observation: Portioned rice in the walk-in was observed at 78 and 64F.
    Correction: Adjust procedures or methods to assure that food is properly cooled to 41°F or below. During the inspection, the rice was placed on sheet trays to facilitate cooling. Retrain staff on proper cooler methods and ensure foods adequately cooled before being portioned. Correct By: 11-Dec-2014
