Yo I'm a pastry chef in Houston on my way to Vegas. I come from a state that has no unions or laws governing a job.

What kind of permits do I need to qualify for a job on the strip. Dose the state require a permit to work with food too?

Am I automatically joining a union when accepting a job? How much of my money will this club take from me?

You just need to get hired. Your employer will explain how to take care of the rest. It is not a big deal.

Scoop here is a chef on the strip. DM him if you want specifics.

C'mon, no need to be sarcastic.

You need:

1) A Nevada Health Card. Easily obtained for $60, including a hepatitis shot and a one-hour movie. (Unless you have a recent Serv-Safe certificate. Then you can skip the stupid movie.)

2) "Right to Work" means that when you are hired, you don't have to join the culinary union. But chefs aren't union, anyway. "Chef" is a management position. But good luck moving straight to a chef position in this town. By all means, apply. But you might have to spend time as a pastry cook and work your way up to the white jacket. Personally, I wouldn't take a chef's job in this town. I have better things to do than work 100-hour weeks for not much more pay than a master cook.

3) Just get your foot in the door somewhere. If you have the skills, they'll put you in the position that you want. And it won't take very long. Not if you have a great attitude and the skills to back it up. But you need both. If you come in with a lot of swagger, it will be a lot harder. Be the nicest, hardest-working, most "can-do" guy in the kitchen, and you'll go where you want in a matter of months.

EDIT -- But once you get what you want, continue to be the nicest, hardest-working, most "can-do" guy in the kitchen. That's a MUST in this town.

EDIT -- Since you asked, the "dues" for the "club" is $500 per year. But you can opt out and you get the same benefits. But don't expect the union to go to bat for you if you have any issues with the resort. My opinion on union dues is, "Whoop-dee-ding, it's only $500." One of my co-workers opted out, said some **** to a Mexican cook about immigration reform, and is now in hot water without the union to help him out.

I can't tell from your post if you are pro union or not. Would you say that the benefit outweighs the cost?
