If you like Pappadeaux's you will love Lafayette's at Wilcrest and Belfort. Same quality food at about half the price.

I recommend a deep fryer and a trip to Fiesta Supermarket.

Chains are simply successful non-chains. Good food can be found at both.

Another recommendation for Pappadeaux if you want consistent, reliable quality with decent table service.

That's a stretch. I've been there and although the recipes are similar there were obviously a lot of shortcuts taken. It wasn't bad, but it's not even close to Pappadeaux quality.

Your taste buds may be more refined than mine.

What shortcuts do people take when frying shrimp, besides not cleaning them?

That's a good point - I was speaking more about that restaurant as a whole. When we went I had their version of the Pappadeaux catfish opelousas and it was just ok. Their french bread wasn't fresh, the vegetables were frozen and not well seasoned, they served little margarine packets instead of fresh butter, etc. I liked the fish ok but I wouldn't go back for it.

I didn't try the fried shrimp but I will next time I'm over that way. That's exactly the kind of joint that might do it great, for cheap.
