There is a fella on one of my pipe smokers forums who is a trucker and knits during all those long waits to get loaded/unloaded or lay over's that is quite good at it since he shares his work with us often on our pipe smokers forum.
He's good enough that he now knits pipe holsters for the member of the forums!
Are you young? I know, have known guys who sew, knit, crochet, tat, decorate cakes and arrange flowers. Some people just have a talent and are blessed to find an outlet.
There was a man who belonged to a knitting group I used to go to.
My MIL's grandfather used to make lace doilies!! He was a firefighter, and all the men would sit around the fire house making doilies to pass the time while waiting for a fire. This was probably back in the late 1800's. We actually have some of the doilies he made.

one of the employees at my local yarn shop is male, and i know some other men who crochet/knit. i even know a guy who spins! knitting was actually a primarily male profession when it started - i don't see anything un-manly about it.
i actually kind of wish my husband would take it up, so i could talk to him about it!
as for not having time, one of the reasons i like knitting so much is that it's so portable and i can do it when i'm waiting for the bus, on the bus, in a waiting room, watching tv, etc. the way it passes the time when you're waiting around reminds me of the way smoking used to be for me (light a cigarette/start a row and the bus always comes!), but you can knit in a lot more places! plus you end up with cool garments instead of cancer & emphysema!
My knitting instructor at my local knitting store is a guy. He told the funniest story about accompanying his wife (also a knitter) to a knitting convention. Apparently there was a vendor who sold knit caps that looked like sheep so he bought one and embellished it with some "man parts".
He is tattooed, hip and cool and when not teaching knitting gives guitar lessons at the local rock music school.
It can be done....
