SO brought good old fashioned chicken breasts home yesterday. I have not see bone in/skin on in a long time. On the grill they will go, pasta salad, rabbit food and a cold beer. It is going to be a muggy scorcher out there today!
Tonight I will have leftover spaghetti with chunky meat sauce. Hadn't had spaghetti in ages (when I have pasta, I usually make other kinds) so it was a nice change. All I had was whole wheat *, so that would have to do. For the sauce, I started with onions and ground beef on the stovetop, then added jarred pasta sauce () plus a can of diced tomatoes plus mushrooms -- I wanted it to be REALLY chunky!
I also added a bunch of Italian seasoning just to spice it up a bit. It turned out GREAT. It's very silly, but I always forget how much I like spaghetti!

* Checked the "best by" date on the package but only after dinner ... it was 2008. It tasted perfectly fine. Dried pasta appears to basically last FOREVER!
We're having spaghetti and meat sauce too along with a big salad. I'll make a loaf of Italian bread if DH wakes up from his nap -the bread machine is very noisy!
Ribeye, crispy-burnt on the outside, med-rare on the inside, with caramelized onions & steamed spinach with fresh lemon & Himalayan salt. Small mixed salad with lemon-Balsamic vinegar dressing.

The next guest’s tentative arrival is about 7:00 pm. We will have drinks and appetizers and warm up other made ahead stuff, as needed.
