A rainy and humid day and I am preparing for my Saturday and Sunday long distance cycling....
Household chores are done and I just put 2 carrot cakes in the oven.One I will freeze in slices and the other one will be drizzled with bitter Belgium chocolate.Bauernbrot/farmer bread is rising and milk is gently boiling for homemade yogurt.
From the leftover green lentil soup I will make daal lentil parathas served with mango chutney, green chili raita and a plate with tomato,cucmber,carrot,green/red Bell pepper,red radish and red onion slices.To drink lemon water.For dessert 1/2 a pink grapefruit.
Here is my carrot cake recipe passed on to me so many years ago...
1 cup sugar
3 eggs
3/4 vegetable oil
mix foamy with a hand mixer
add:
1 tsp.mace
1 tsp.cinnamon
1/2 tsp.salt
1/2 tsp.baking soda
1 cup sliced almonds
1 cup grated carrots
1 1/2 cup flour
1 1/2 tsp.baking powder
Mix everything with a spatula by hand, til smooth and put dough in a non greased springform,sprinkle with almonds (and flax seeds optional)
Bake in oven at 350 degree F for 1 hour til dark golden brown
