I had never heard of melting potatoes so I looked it up. looks good and something I might try.

Fajitas with grilled chicken and vegetables. May grill the flour tortillias as well. Stirred margarita with fresh limes, cold beer. Maybe eat on the patio.

I recently made these and all I will say is don't pay attention to the timing in the recipe - use you own judgement when they're ready to turn and when to add the broth. The first time I made them they turned out fabulous, the second time they got way too brown because I was going by time and not by how they looked. The type of potato and freshness of it makes a difference too.

Having one of DH's favorite meals tonight -pasta primavera. I'm going to make a salad too. I want to make a caprese salad because I have lots of fresh basil but don't have access to any tasty tomatoes.

Last night we had roast pork, so tonight it will be a large veggie stir fry & some leftover pork, with brown rice.
