Roasted cauliflower with onion, chard, garbanzo beans and dukkah. (Middle Eastern spice blend with pistachios) and a Winter salad with romaine, fresh mint, tangerines, fennel, green onion, radishes, dates, walnuts and a tangerine-mint vinaigrette. A Shiner Bock to drink.

Found a bag of chicken shreds in freezer ( Costco leftovers) & I'll use those to make quesadillas, with guacamole, & a vegetable mix
