I've been catching up here -- lots of great dinners that I missed! (So much for my semi-retirement ... this semester has been insane!)

Healthy eating again -- tonight it was a pork chop with half a plate of veggies and avocado. The avocado was, AMAZINGLY, perfect!! And I'd just made a grocery store run so I had lots of different kinds of veggies -- carrots, onions, mini sweet peppers, grape tomatoes, zucchini, mushrooms, snow peas, and spinach, if I'm remembering correctly!



I made enough veggies for tonight plus to add to 2 bowls of soup later this week.



Everything was yummy. I had a Hannaford frozen fudge bar for dessert. THAT was yummy too, LOL! Happy Tuesday!

Leftover Mississippi pot roast made in the crockpot yesterday, mashed potatoes, field peas.

For dessert, two Coconut Fudge Caramel cookies from the Dollar General that are an exact dupe for Girl Scout's Samoas.

Lemon chicken breast sauteed with capers and garlic on top of linguine, side was sauteed shallots, mushrooms and spinach.
I LOVE spinach, husband does not but he ate a little.
Dessert: greek yogurt with cherry jam
