So many garden tomatoes, fried some up with red & yellow bell peppers & onion. We'll add some steak tips have it all over brown rice.

Tonight I made creamy shrimp and veggies with pasta, kind of making it up from things I thought would work. (Ha! That could be disastrous!)

It was similar to this recipe -- https://www.campbells.com/recipes/cr...ey-with-pasta/ -- but I didn't use scallops and my version was I suspect a bit more healthful than Campbell's (and I'm not being snobby -- I used their cream of shrimp soup as a base!).

It was actually very easy. Cook lots of veggies ... well, you know I've done THAT a million times ...



Then in the last 4 minutes, add a can of soup plus half a cup of milk plus bay seasoning plus garlic and stir. (I was also boiling the spaghetti in another pan.)



Then in the last 2 minutes, heat up the shrimp (this morning I bought small shrimp that was already cooked because I thought I might be trying this tonight!) in a separate pan, then drain the pasta, dump it on a plate, add 1/3 of the big pan of veggies and sauce, then add about 1.25 ounces of just-heated-up shrimp ...



It was incredibly good, and I have 2 portions left that I will freeze (NOT with the shrimp as it would get overcooked later in the microwave, but I'll probably cook more pasta to add to them before freezing). YUM!

Floured and sautéed chicken in garlic, olive oil with cherry peppers, onions, lemon, artichoke hears and fresh rosemary with broccoli over a Spanish rice blend❗️

Mondays and Wednesdays my wife has rehab for her shoulder replacement. We hold off on eating lunch and stop at our favorite restaurant for a late lunch/early supper, then snack later. For my early supper I had a waffle and 2 sausage patties at Huddle House. For my snack I'm eating an orange.
My wife had a homestyle Huddle Bowl (diced potatoes, bacon, sausage and scrambled egg. She didn't want the cheese on hers).
