Watching NHL ICE HOCKEY tonight with friends from home. Very simple tonight.I baked soft Bavarian Pretzels served with red radish salad,Harzer and Limburger cheeses,for the men a few cold cuts. To drink Löwenbräu. For dessert later apple strudel with vanilla sauce and a cup or 2 of black coffee. .
Made enchiladas again (have to keep practicing, you know ) ... this time I made some beef and some chicken ... here they are about to go into the oven ...
And here they are just OUT of the oven ...
I think I still like the beef a tiny bit better, but the chicken were really good too. Now I just need to figure out how to freeze them ... I've read many times that they freeze well, but I'm seeing conflicting reports online about how to actually DO the freezing. (Some say bake first, some say not; some say partially bake; some say bake but leave the cheese off; etc. Doesn't seem like it should be this confusing!)
Of course I may just have enchiladas for the next few days, which will mean no freezing needed.
Enjoyed my crockpot chili earlier tonight (Chili beans, beef, green peppers, diced tomatoes, olives, garlic, chili powder, salsa and tabasco sauce. Also sprinkled a little cheddar cheese & green onions on top). Drank Goose IPA.
I easily have enough leftover to enjoy on Sunday, too.
tonight will be something very light I am sure. I might take a container of soup out of the freezer. we are going to Sunday brunch with the family and some out of town guests. There will be 15 of us, will eat and drink plenty. After a meal like that we rarely have a real dinner.
