Sorry, but no matter where I tried them, American pancakes are boring, flavorless and taste like a cardboard box with syrup on top.
Most people eat them drenched in fake maple syrup. Fake maple syrup resembles real maple syrup about as much as Velveeta resembles a good Camembert.

I haven't made them in a long time (since I moved away and living without my son), but usually will swap some of the white wheat flour for a more interesting flour like spelt (not all, but some), or almond meal. gives it a nice nutty flavor.
I like mine with a tart cheese (like goat cheese, or labane) and a little drizzle of date honey. In a pinch, regular cream cheese will do also. Don't knock it till you've tried it :-)
ETA: these also freeze beautifully so they're great to have on hand for a quick breakfast

Most restaurants in America use packet mix, you can taste the chemicals. It amazes me that that is easier/more economical for them than having cooks break eggs.

I went to iHop and even there the pancakes had a cardboard taste to them
