In honor of the day we will be having pancakes for dinner.
I can honor some things, but pancakes, NOPE. If there is anything I really can live without it is pancakes. I love good French toast and waffles are pretty darn good, but pancakes, never been a fan. I do love crapes though, which is nothing more than a super thin pancake to me. Amazing, as I have said before, how different our food favorites are.

Hah! I was just going to post that I must be the only person in the world that doesn't like pancakes.
Mmmmm....just happened to get some freshly made local maple syrup today - perfect!
Our favorite thing to sop up that maple syrup with is...twice-toasted French toast!
Place some thick slices of homemade bread into the toaster, till crisp and brown. In a rectangular pan mix: fresh whole eggs, heavy cream, and vanilla. Dip each piece of toasted bread into this mix, but not till soggy. Cook on a griddle or large frypan. Serve hot with melted butter, a sprinkle of powdered sugar, and drizzled maple syrup. Enjoy!
This is much crispier and more flavorful than pancakes - any day!
