Being a Southern Girl I thought the only way to cook veggies was in bacon fat. My mother always kept a little strainer container on the shelf along with her flour, sugar, coffee. All canister sets back in the day came with matching bacon drippings container.
I stopped keeping bacon drippings for many decades and only recently- last 2 years- started keeping a bit and adding it to my green beans. It makes a big difference. I've greased my pancake pan with it some which gives great flavor.
Fresh from the garden, a small pile of leaf lettuce or young spinach, paper thin slices of radish, and chopped green onions. Fry up a little bacon, crumble over the greens and pour a teaspoonful of piping hot bacon grease over all, salt and pepper to taste. My mom called it a wilted summer salad, quite tasty.

I throw it away. I don't like my veggies to taste like meat, so don't use it the way a lot of folks do.
