What brand of bacon has more pork than fat and is there anything
I should look for so that I get more meat for my buck?

I cook my bacon until the "fat" is crispy--the actual liquid fat cooks right out of it!
Have you tried turkey bacon (or something similar)?
Just look for the most "lean" package you can fine! I've found that even the same brand's contents vary widely--sometimes a package will barely shrink, and then the next one will wrinkle up and be 1/3 the size it was when you started! I guess it depends on the pig!

I believe that Center Cut packages have a better lean to fat ratio. You might compare labels next trip to the market. Breeds of pigs will also effect the leaness of all of the cuts more so than a particular brand.

A little off the subject, but have you tried Turkey bacon? I think you're be getting more meat for your buck, no fat, salt or grease. I think it taste better IMO. Its a bit more pricier but worth it health wise.

If you can get 'back bacon' (also called Irish bacon) you'll find it has much more meat and less fat than the usual strips of 'streaky' (from the pork belly) bacon. A good butcher should be able to get it for you, the grocery stores only ever seem to have the fatty streaky stuff.

Canadian bacon should be the meat-only part of back bacon, but is often sold in a processed roll and sliced like a salami....at least it's low fat, but also low-flavor!

Cooking streaky bacon until very crisp will get rid of much of the fat - but then there is little meat left either.

I like to eat more meat and less fat and less meat cooks flatter even though I broil mine now in a broiler pan instead of frying . I tried Hormel center cut even the package said less fat but after it was cooked I didnt see it and to the other poster bacon should come from pigs not a turkey.

Someone brought a salad to a church covered dish Fri night and it had vegetarian bacon bits I am still trying to figure that one out.

I prefer the slab bacon. Not to sure if it's leaner but for me, I seem to get less shrinkage with it and the taste--oh my--so good! Yum!

Cook your bacon on a George Foreman grill, it comes out flat and the fat drips away. The vegetarian bacon bits might be tofu (bean curd). Very good stuff. I get tofu burgers from Costco, they taste real good and a lot less fat. I prefer tofu burgers to turkey burgers. Whole foods or a health food store may carry tofu bacon.
