It promises to be a beautiful Spring evening so I think dinner will involve a motorcycle ride to a classic NJ road house where a 'ripper' is the meal of choice. A hot dog deep fried 'til it rips open, topped with mustardy relish (or it may be relishy mustard), sided by crunchy onion rings and washed down with birch beer. Almost as good as a trip to the beach
I made up a seafood salad to have tonight, believe it or not the food city didn't have salad shrimp so I bought U 24/36's and chopped them up with the meat from 4 king crab legs and sauteed in some clarified butter with 1 tablespoon grated crab shell . I made a sauce in the food processor with 8 oz of feta cheese, 2 caps of white wine vinegar, 1 teaspoon celery salt, 1 heaping tablespoon of sugar, 1 minced garlic clove and 2 tablespoons olive oil. To this I added 2 cups chopped celery and folded in the seafood mix and set in the refrigerator, when I close tonight I'll serve on large Croissants, garnish with radicchio and serve with knorr's lobster bisque.

DH had to leave his bike back home in UK so I'll have to go with you instead!
I took sea scallops (the large ones cut them in half) I used 2 lbs.
Crushed up a sleeve of Ritz crackers and poured them on the bottom of a buttered casserole dish.
Place the scallops on top of that.
Then melted a half a stick of butter
put in almost a cup of merlot
to that I added another sleeve of crushed up Ritz crackers.
Spread that completely over the top.
Baked in a 350 oven for 40 minutes.
It was really good.........Simple too!
