Somehow not being able to get Carolina Rice in NC seems wrong
Maybe I should go into business smuggling Celantano into NC
I'm an eggplant parm fan myself.
It's funny how things can vary so much regionally. I was in Nevada one time and not wanting a full dinner went to a deli inside a casino. Ordered a Pastrami on Rye. Now where I grew up that gets mustard, period!
When my sandwich arrived dressed with lettuce, tomato, and mayo I looked at the waitress like she had 2 heads
Whew! I finally got home. All done as far as the shopping in the city goes--I thnk! We had lunch at TGIF so we aren't a bit hungry for dinner. I am just flat out beat. Still have a few things to do here locally and then we should be pretty set to go. I am so not even thinking about cooking right now. I just want to be on our way. Two more days!!!
Tonight we had baked ziti, or ziti bake as Italians call it....and cyn has the recipe. As usual I ate too much of it so now I am sipping on black coffee with Sambuca Romano in it to aid in the digestion. I never learn when the food tastes so good
Two more days and it's off on American to sunny CA for a wedding. Have a great time cyn...
bbq baked chicken thigh (just 1) and salad
kikkoman wine vinegar & olive oil dressing with parmesan cheese
vine ripe tomato with romaine lettuce
(there now does that make it a lil less boring?)

You need to make a watercolor painting of that Huck...and I hope you are the right Hucklberry...
burdell, I made eggplant parm today for dh. He tells me that I make it exactly the way his grandmother did from Italy, I would not know, I don't eat it.I made capellini (angel hair) and clam sauce for myself. So there are plenty of leftovers and you are more then welcomed to come down and have some.
For those of you yearning for RCG's Baked Ziti I will share his wifes recipe. I have not been fortunate enough to try it but if he says it's good then it's good!!
BAKED ZITI
Ingredients
Basic sauce
32 oz ricotta cheese
2 cups shredded mozzarella cheese
½ cup parmesan cheese
1 package of ziti
Cook pasta and then drain. Have your sauce cooked and ready to go. Pour half the sauce over the pasta and toss well. Layer half the pasta in a 13” x 9” baking pan then spoon all of the ricotta cheese over the pasta. Pour enough sauce over this to cover and then sprinkle half the shredded cheese and parmesan cheese over this. Add the remainder of the pasta and then the sauce and then the remainder of the shredded cheese and parmesan cheese. Cover with aluminum foil and bake at 350 degrees for 30 minutes. Uncover and leave in the oven for ten minutes.

Up here we get trucks from NC parked on the side of the road selling furniture. Maybe I should bring a truckload of Celentano specialties and sell it on the side of the road in NC
