If you are looking to do some skiing, the I-70 resorts (Copper Mtn, Breckenridge etc) have pretty good package deals during the holidays.

For a different kind of experience, you could pitch a tent for one nite at each of the 5 tri state points where Colorado meets up with 2 other states. You could also camp at the four corners point, but heck...nobody does that anymore, it's too popular. (
Additionally, the 4 corners marker is inaccurrately located! )
