I love the vague racial categories, "white" "black, "Asian" "Hispanic" ect. Speaking as someone that currently resides in the south and has been all over the southeastern region here's how the so called "diverse" numbers on paper translate in real life... Whites=non jews, non Italians, non polish ect. As a matter of fact the majority of southern white people don't know their ethnic origins and that's a fact. Black=African americans. Asians=The Chinese immigrants that own the restaurants. Hispanics=Mexican immigrants that own the restaurants, do landscaping, and work in factories. With the exception of Miami and even ATL, that's the so called "diversity" in Dixieland.

That's mostly the case for everything that isn't the west or east coast and/or a really big metro. You missed Houston and DFW in your list, and those would be covered under big metros. I think some college towns also get a bit higher up than average in terms of diversity.

Does wild rice get grown within/along any of the great lakes or is it only smaller lakes?

Dude, just use the internet. That thing tells you, like, everything. Jewish deli, italian bakery and oktoberfest sound pretty likely. Baton Rouge is a pretty small place though so it's general likelihood of having this or that isn't that high. Baton Rouge is actually way smaller than the Midwest.
