What type of food should Chicago have more of?

I vote for Malaysian food. I'm aware of three restaurants in the entire area (Arlington Heights, Mundelein, and Hoffman Estates) that serve Malsysian food, but 0 are in Chicago itself. Talk about a melting pot of flavors..I hope there's some in the city I'm not aware of, but yeah a little surprising to me.

Aside from Heaven on Seven, there really isn't too much. Or, are you talking beyond the NOLA staples?

We're short on Nawleans and Cajun options as well, but what I'm talking about are things like pan-fried chicken, chicken with milk gravy, smothered pork chops, country ham and meat loaf, shrimp and grits, genuine biscuits and gravy, baked catfish or baked spare ribs etc. etc.

Outside of Chicago's black belt, you won't find a lot of choices for Americas most popular regional cuisine.

Agreed. It's surprisingly difficult to find good sweet tea and grits.

Well, there's always Wishbone... I know some people hate it. The last time I ate there I was a teenager (meaning, a looong time ago).

Chicago already has about the most extensive offering of different cuisines, so I don't think more of any one type is needed.
