And, steak is not just steak....'
Besides, that 'browning' as you call it isn't bad. All it means is that the meat has been exposed to the air. And I wouldn't want a fresh butchered piece of meat...beef, like wine, must age... and get mold while hanging...

I'll stick with buying the ones that are still red. Push comes to shove, to me, steak is steak. Now, come on, nobody would leave a Denny's raving about the steak. You catch my drift though? A steakhouse is a steakhouse to me. You can spend alot money at some, and the difference can be very small, if any, compared to one than was cheaper or maybe even a 'chain'.
