You've cooked your own goose. You admitted guilt and that's what the police officer has made sure that the judge will be aware of that. It's up to the judge now whether he decides to allow you to alter your plea.

Better luck next time.
Agreed. Keep in mind that the officer almost certainly recorded your confession, and that the recording will be admitted into evidence. Most cops have a wireless microphone that provides a soundtrack for the dash-mounted video camera.

If you plan to contest a ticket (or anything else) in Court, do not inform the cop of your intentions. If you beat your chest and tell him that "I'll see you in Court," He will return to his car, write down his side of the story, and may even talk with the Clerk of Court to schedule your hearing on a day on a day that in convenient for his schedule. I agree that your best bet is for the cop to not show up for the trial. However, if you tell about your intention to plead not guilty, he will plan ahead, and will probably be far more likely to show up. When you get a ticket, asking the cop "where do I go to pay the fine?" or "how long do I have to pay the fine before I have to appear in Court?" might give them opposite impression. You can always change you mind later. ;-)
