    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Equipment - Good Repair and Proper Adjustment
    Observation: #8 1dr standup freezer in back storage area, was observed in a state of repair and condition that prevents necessary maintenance and easy cleaning.(Ice/frost built-up on interior surfaces and on food product)
    Correction: Defrost/Repair the freezer to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the issue/freezer replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: The temperature measuring device located in front refrigeration case was not easily readable.
    Correction: Provide an easily readable thermometer so employees can accurately read the thermometer.Corrected on site.

    Observation: Observed accumulations of grime/Mold on the following food contact surfaces: Interior drop cavity of automatic ice machine.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Food contact areas in the walkin cooler are exposed to contamination since the joint around the food storage area/caps missing-holes exposed and are not watertight and there is access from ouitside which provides contamination from the opening.
    Correction: Provide a watertight joint around the food storage area/caps interior panels to walkin cooler to prevent drip, condensation, or dust contamination,pests and etc.. to the food contact area.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The door gaskets of the #5 lowboy and #3 lowboy coolers (prep units) is in disrepair and not clean.
    Correction: Repair or replace the coolers door gasket in accordance with the manufacturer's specifications.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents.Gap opening not IAW code requirements.Need larger weather strip installed at bottom of door.
    Correction: Protect the food establishment against the entry of insects and rodents by: 1. Filling or closing holes and other gaps along floors, walls, and ceilings

    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.

    Observation: Ductwork in above vent system in kitchen is not maintained in good repair and wall next to kitchen handsink.
    Correction: (Hole on duckwork) Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Correction: Repair the unit for no water leakage to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the#4 unit, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Ceilings in kitchen and interior cavity of drop plate area for ice machine in the main kitche area/Bread prep area is noted in need of cleaning.(Dust,lint,mold in ice machine.).
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
