    Observation: The food-contact surfaces of the following equipment were not observed sanitized: pans, trays, utensils, etc. Dispenser does not appear to be dispensing sanitizer.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Have unit serviced. Switch to manually setting up sink until serviceman has been. -- Manager switched to packets of sanitizer. (100PPM)

Recheck of prep units. Still not maintaining foods at 41 degrees F or below. Using time on tomatoes. Suggest time be used on all potentially hazardous foods (PHF's) until unit is operating properly. If units can not be repaired, replace them. Thermometer inside unit at drive-thru reading 44 degrees. Foods in top of unit above 41 degrees F.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Foods in top of prep units cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. -- Will use time until units have been serviced again.

Recheck of refrigerators. Walk-in refrigerator thermometer reading 42 degrees F. Foods were 38-39 degrees F. Temperatures ok at this time. Serviceman is on the way to recheck prep units. Ice will be used until serviced.
