    Observation: Improper methods used to thaw steak. Boxes of steaks sitting on table.
    Correction: Thaw potentially hazardous foods by either of the following methods: 1. Under refrigeration that maintains food temperature at 41°F (45°F) 2. Completely submerged under running water at a temperature of 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow. Ready-to-eat food shall not exceed 41°F and raw animal foods shall not exceed 41°F for more than four hours 3. As part of the cooking process
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The prepared ready-to-eat (RTE) lasagna, baked potatoes, etc. in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Critical: Equipment and Utensils - Before Use After Cleaning*
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: containers, silverware, etc. No sanitizer in dishwasher.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Have unit serviced immediately. Use 3 vat sink until dishwasher is working properly.
  • Insect Control Devices - Design and Installation
    Observation: Insect control device is located over food prep areas & clean dishes where dead insects may be impelled or fall.
    Correction: Install the insect control device away from a food preparation area so that dead insects and insect fragments are prevented from being impelled onto or falling on exposed food, clean equipment, utensils, and linens, and unwrapped single service and single use articles. Exposed food and food-contact surfaces must be protected from contamination by insects or insect parts. Installation of the device over food preparation areas or in close proximity to exposed food and/or food contact surfaces could allow dead insects and/or insect parts to be impelled by the electric charge, fall, or be blown from the device onto food or food-contact surfaces.

Visited facility to recheck on some items that needed to be handled prior to permit being issued. Fee has been paid. Table available for dishwasher drain. 100 ppm chlorine in dishwasher. Self closers on bathroom doors. Still need to clean facility & ensure that all refrigerators & freezers are operating with thermometers available in all of them. All cleaning to be done this weekend. Removing freezer that does not work this weekend. Waiting for dumpster to be delivered.

Stopped to check on construction progress. Spoke with Mustafa on phone to discuss need for hand sink in kitchen to be located closer to cooking line. He stated they will move it further along wall about 1/2 way between dishwash area & cooking line.
