Recheck of temperatures on fried chicken in hot holding cabinet. Unit has been serviced. Motor replaced. Only item in unit is peach cobbler with a temperature of 170 degrees F. Chicken on front line is 154 & 161 degrees F. Heat lamp bulbs were replaced.

Recheck of temperatures on fried chicken. Fried chicken still hot holding improper temperatures. Temperatures taken were 130-132 degrees. Chicken was discarded. Have hot holding cabinet serviced. Unit does not appear to be operating properly. If unable to repair unit, replace it.

Plumbing all repaired. Hot water at all hand sinks. Hand sink in kitchen draining well. Repairman finished by 9PM on Monday (12-3). Biscuit cooler operating at 36 degrees F. No foods in unit at this time. Will continue to monitor.

    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Have unit serviced. -- Foods relocated.
  • Plumbing System Maintained in Good Repair
    Observation: The sink basin at the hand sink is slow to drain. Also no hot water at hand sinks due to leak in water line.
    Correction: Plumbing systems and components shall be maintained in good repair. Repairman on site working on plumbing issues. Will be corrected today.
