Prep unit must be adjusted to the internal temperature that will support 40 - 41 F or less in the top portion of unit. Maintenance was working on unit adjustment at the time of inspection. Management to monitor temperature of the food in the top portion during hours of operation.

    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Sliced tomatoes and chopped ham cold holding at improper temperatures in the top portion of prep table.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Self-closure device on back kitchen door is not effective
    Correction: Protect the food establishment against the entry of insects and rodents by solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
