    Observation: Walk-in freezer floor due for cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Beverage air salad unit door gaskets torn.
    Correction: Repair or replace the Beverage air salad unit door gaskets in accordance with the manufacturer's specifications.
  • Non-Food Contact Surfaces
    Observation: Ice buildup behind fan in walk-in freezer. Beverage air salad unit door gaskets in need of cleaning.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Spoke with owner concerning inspection. Items being addressed during inspection. Viewed food handler card. Hood system due for cleaning per sticker posted on hood. Informed by owner that hood system is scheduled for cleaning. Beverage air sandwich unit and True prep unit lids were closed to help unit temperatures. Facility recommended for permit. Permit will be delivered once printed.
  • Food Storage - Clean and Dry Location (corrected on site)
    Observation: Pans stored on floor in walk-in freezer.
    Correction: Elevate food storage onto approved shelving with minimum 6"" legs or casters.
  • Critical: Food - Potentially Hazardous Food: Cold Holding*
    Observation: Chicken and turkey cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

Copy of Certified food manager schedule, copy of food handler class schedule, food temperature log, dishwasher temperature log left on site. Current information need for current certified food manager. Follow up inspection will be conducted in two weeks, on or about Oct. 18, 2013.

    Observation: Food service employees working in the food service establishment without having a valid food service card.
    Correction: A food service employee shall have a valid food service card prior to working in the food service establishment. The person in charge shall not employ anyone to work in the food service establishment until they posses a valid food service card. A food service employee shall have a valid food service card while working in a food establishment.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Water observed in bottom of salad prep unit and unit holding at improper temperature.
    Correction: Repair the salad prep unit to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the salad prep unit, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Conformance with Approved Procedures
    Observation: Temperature logs are not being maintained by the establishment daily (at least three to four times a day).
    Correction: Maintain accurate temperature logs.

    Observation: Hood ventilation system due for cleaning.
    Correction: Clean intake and exhaust air ducts and change filters so they are not a source of contamination by dust, dirt and other materials. Have servicer post current sticker on hood system when complete.
