Inspection conducted with manager and kitchen chef. Viewed temperature log sheets posted at refrigeration units. Hood system recently cleaned by Industrial Steam Cleaning with next service date for March 2016. Facility recommended for permit renewal. Food permit, copy of application and receipt issued.
  • Critical: Toxics - Storage of Toxic Containers* (corrected on site)
    Observation: Spray bottles of chemical are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Spray bottles stored on hand sink at bar.
    Correction: Containers of chemicals must be located in an area that is not above food, equipment, utensils, linens or single service items.

Steve Eda Serv Safe certificate need to be transferred over to a Norfolk food manager certificate. There is a $10 transfer fee. Copy of food manager and food handler class schedules given to chef. Facility recommended for permit. Food permit and copy of receipt issued to chef.

    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

Employees have current food handler cards. Manager have copies of cards posted in office. Spoke with Food and Beverage Manager and Executive chef concerning issues being addressed from previous inspection. Engineering staff addressed issues with lighting and equipment repair in kitchen. Temperature logs are posted and maintained current for refrigeration units. Observed staff with good personal hygiene practices during walk through of dining and kitchen areas. Facility recommended for permit. Permit and copy of application issued to food and beverage manager. Informed manager to post food permit where it is visible.

    Observation: Broken tile observed in hallway.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Viewed menu and consumer advisory on menu. True 2 door fridge in kitchen registered at 36 degrees, Traulsen fridge (breakfast) 34 degrees, Room service fridge 44 degrees (fridge just stocked), Ice cream box 0 degrees, Breakfast walk-in 26 degrees, Walk-in freezer 0 degrees, Vegetable cooler 40 degrees, Dairy cooler 36 degrees, Dishwasher prewash 120, wash 150, rinse 164 and final rinse 160 degrees. Have staff recheck refrigeration for thermometers stored inside units. Monitor and record temps of all refrigeration units. Engineer making repairs during inspection. Will follow up concerning items to be addressed on 7-15-14.

    Observation: Some food service cards viewed are not acceptable. Food service employees working in the food service establishment without having a valid food service card.
    Correction: A food service employee shall have a valid food service card prior to working in the food service establishment. The person in charge shall not employ anyone to work in the food service establishment until they posses a valid food service card. A food service employee shall have a valid food service card while working in a food establishment.
  • Critical: Food - Potentially Hazardous Food: Cold Holding*
    Observation: Turkey, sliced tomatoes and chicken cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Ventilation Hood Systems; Filters
    Observation: Opening observed in grease extraction filters under hood system.
    Openings observed in front panel of hood system.

    Correction: Alter or replace this equipment so that the filters are secure with no openings. Repair openings of front panel of hood system.
  • Temperature Measuring Devices
    Observation: There were missing thermometers inside some refrigeration units throughout facility.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gaskets on 2 door unit at bar, Victory 4 door unit in hallway, True prep units in kitchen, True 2 door fridge next to hood sytsem in kitchen.
    Correction: Repair or replace the door gaskets in accordance with the manufacturer's specifications.
  • Warewashing - Mechanical Warewashing Equipment, Wash Solution Temperature
    Observation: The final rinse cycle temperature of the high temperature sanitizing ware wash machine is not meeting the manufacturer's specifications. The minimum temperature for machine is 180 degrees while the actual temperature was registering at 160 degrees.
    Correction: Recheck final rinse cylce to ensure temperature is registering at required temperature per data plate for machine.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of food debris on the following food contact surfaces: Black freezer box
    Correction: Clean and sanitize these surfaces for food contact.
  • Lighting, Intensity
    Observation: Less than 50 foot candles of light was noted under hood system. Two lights out under hood.

    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.
  • Physical Facilities in Good Repair
    Observation: Broken tile observed in hallway.
    Openings observed in ceiling tiles in kitchen.

    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
