    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria. Person in charge agreed to use a time as a public health control plan for pizza from now on to maintain quality.

    Observation: Observed turkey and shredded cheese cold holding at improper temperatures in the downstairs 1-door reach in (#5).
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The door gasket to the downstairs freezer is in poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.

    Observation: The food-contact surfaces of the meat slicer were observed soiled with remnants of old meat.

    Observation: The 3 Pepsi coolers
    Correction: the dry storage walk-in door handle

    Observation: Food contact surfaces of the food slicer used to prepare/store potentially hazardous food items were observed soiled with accumulations of food residues.
    Correction: Clean food-contact surfaces of food slicer no less than every 4 hours to prevent the growth microorganisms on those surfaces.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the following items have accumulations of grime and debris:
    - sides of fryers
    -insides of the 2 upright freezers (dirty hand prints)
    -yellow food container lids (shelf at 3 compartment sink)

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Light bulbs in the hood are burned out
    Correction: wood stand under the pizza warmer (wood needs to be painted)

Non risk factors were discussed so that these items can be worked on before the time for the Health Permit renewal inspection. Lots of improvement in basic sanitation since the last inspection.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory in the employees rest room downstairs.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: The person in charge could not provide a food temperature measuring device.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The walk-in door handle and the front Pepsi Cooler door handle are broken and were observed in a state of disrepair and damaged.
    Correction: Repair the handles to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the handles, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the following items have accumulations of grime and debris:
