Handwashing facilities were being maintained properly. No food temperature problems were observed.
- Hair Restraints - Effectiveness
Observation: Employees were observed working behind the counter without wearing the hair restraints that we require.
Correction: We require that employees working with food wear a hat, an open visor, a hair net, a scarf, or some other type of hair covering that we have approved.
- Sanitizing Solutions, Testing Devices
Observation: The test strips for monitoring sanitizer levels, associated with the sanitizing step of manual dishwashing, which are required to be on hand, could not be located.
Correction: A "quat" type sanitizer is used for the sanitizing step of manual dishwashing in this establishment.. Available chlorine level needs to be 100 to 200 ppm at all times, for "quat" type sanitizers. This is measured by the "quat" type test strips. The proper test strips need to be found, or purchased as soon as possible.
