Critical: Demonstration of Knowledge* Observation: The person in charge was unable to identify required cold holding temperatures and proper quaternary ammonium sanitizer solution concentration.
Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled. Information on cooking and holding temperatures was provided to the PIC.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Cut cantaloupe is at an improper temperature of 45.5°F.
Correction: Discard the food. Cold hold all potentially hazardous foods at 41°F or below to inhibit the growth of harmful bacteria. The Person in Charge discarded the cantaloupe.
Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site) Observation: Quaternary Ammonium sanitizing solution concentration measured in excess of 400 parts per million, exceeding an acceptable range.
Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.
Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site) Observation: The following food-contact surfaces of the produce slicer are visible soiled with food.
Correction: Clean and sanitize these surfaces for food contact.

Risk Factor
An employee health policy is posted. No temperature violations observed. Food contact surfaces appear clean and utensils are positioned with all handles up. Only closed food containers are kept follow the continental breakfast. We discussed: cleaning/sanitizing the fruit cutter No violation noted during this evaluation.
