Observation: Unlabeled food containers, such as flour, sugar, salt, spices, flakes, etc..
Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
- Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: exterior of dry-food working containers/and lids.
Correction: Maintain nonfood-contact surfaces of equipment clean.
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Kitchen area-floor underneath stove, deep-fat fryer, grill, shelving, flooring around dry-food working containers/bottom shelf, and tracks of speed-rack are noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Inspection conducted for complaint of excess trash and rodents. No rodents or rodent burrows observed. Had dialogue with PIC: to ensure trash is picked up on a regular basis, and grounds are policed regularly for litter/debris. Will call complainant to relay above actions.
- Refuse - Covering Receptacles
Observation: Several super cans observed over flowing with trash.
Correction: Cover all waste containers when not in continuous use. Management should consider obtaining more super cans to ensure all refuse cans are covered at the end of trash pick up cycle to meet demand. Trash pick up is scheduled for tomorrow: 5-7-14.

Observation: The nonfood contact surface of the following equipment has an accumulation of grime and/or debris:
- Door gasket of small beverage refrigerator.
- Door gasket and interior of Snapple reach in refrigerator
- Exterior and cabinet of deep fat fryer.
- Top and back splash of stove.
- Speed rack.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: A light observed burned out in a light fixture in the exhaust hood.
Correction: Replace the light bulb to ensure adequate lighting, especially in areas where you work with heat-producing equipment where safety is a concern. Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
