Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation) Observation: @FOOD@ cold holding at improper temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Temperature Measuring Devices (repeated violation) Observation: There was no temperature measuring device located in the @EQUIPMENT@.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Cooling, Heating, and Holding Capacities Observation: @EQUIPMENT@ was overstocked and is not sufficient in number or capacity to meet the food storage demands of the establishment.
Correction: Provide additional @EQUIPMENT@ necessary to maintain food items at @TEMPERATURE@. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.
Equipment and Utensils, Air-Drying Required Observation: @TABLEWARE@ were found stacked while wet after cleaning and chemical sanitization.
Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

Great job posting employee health policy, and storing raw food below ready to eat food. Discussed hand washing with PIC. Please ensure employees are washing hands at hand wash sink before donning gloves and between glove changes. Please ensure employees who are working at the dish machine are washing hands at the hand wash sink between handling dirty dishes and clean dishes. Please ensure dishes are air dried completely before being stacked. Please ensure wiping clothes are stored in sani buckets when not in use, not on counter tops.
Cloths - Wiping Cloths - Use Limitation (corrected on site) Observation: Observed employee drop wiping cloth on floor and then begin to continue using it to wipe down counters.
Correction: Wiping cloths that are dropped on the floor should be treated as dirty and replaced with clean wiping cloth, not continue being used.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Under counter unit observed to be out of temperature (55 degrees F) at time of inspection. Unit was emptied and food discarded, and will be serviced same day.
Correction: Ensure cold holding units are holding at 41 degrees F or below, and ensure food is not stored in units that are out of temperature.
Food Contact Surfaces - Cleanability* Observation: Several cutting boards in kitchen observed to have deep cut marks that cause the surface to not be smooth or easily cleanable, and were also observed to be discolored due to the surface characteristics.
Correction: Replace cutting boards with new ones that are smooth and easily cleanable, or sand down cutting boards to replace the smooth surface.
Temperature Measuring Devices Observation: The temperature measuring devices located on several under counter/grill units are not easily readable due to build up of grime and grease.
Correction: Provide an easily readable thermometer so employees can accurately read the thermometer and monitor holding temperatures. Thermometers should be scrubbed off so employees can read them.
Non-Food Contact Surfaces Observation: The nonfood contact surfaces of the handles of cold holding equipment have accumulations of grime and debris.
Correction: Clean the surfaces at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Food - Miscellaneous Sources of Contamination Observation: Observed soda gun hose laying in ice bin for drinks.
Correction: Please protect ice for comsumption by keeping hose and other equipment out of ice and preventing potential contamination.
Equipment - Good Repair and Proper Adjustment Observation: The door gasket to the 2 dr reach in is in poor repair.
Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
