NOTE: Please ensure employees are reminded that the dishmachine must reach 120 degrees F. for each load of dishes washed/sanitized - it took six (6) runs during today's inspection to get to 120 degrees F. Having a sign posted concerning the need for the rinse temperature to be a minimum of 120 degrees F. at the dishmachine could serve as a reminder. Good job with all employees having proper hair restraints. Good job with storing chemicals separate and below food, clean dishware, and single-use to-go items.
  • Temperature Measuring Devices - Ambient Air and Water (repeated violation)
    Observation: Some coolers did not have thermometers OR did not have accurate,, working and/or visible thermometers in the warmest part of the cooler. .
    Correction: Put visible, accurate thermometers in the warmest part of every cooler - usually near the door. You can zip tie or hang these on the shelving near the door to help keep them in place.
  • Refuse - Storage Areas, Rooms, and Receptacles, Capacity and Availability
    Observation: There is no refuse container at the area immediately adjacent to the kitchen/food prep hand sink.
    Correction: Provide a refuse container for the disposal of paper towels at the kitchen/food prep hand sinks.

Good job storing chemicals separate/below food, single-use items, and clean dishware. Observed a lot of hand washing during today's inspection - thank you! Reminder to have trash cans located near hand sinks. Make sure the dishmachine reaches 120 degrees F. for each load of dishes washed/sanitized - it took multiple runs during today's inspection to get to 120 degrees F.

  • Non-Food Contact Surfaces (corrected on site) (repeated violation)
    Observation: The spray nozzle at the three-compartment sink was observed to be dirty and had a black mold-like growth on the underside.
    Correction: Clean the top and underside of the spray nozzle as well as all other non-food contact surfaces at a frequency that prevents them from being dirty to sight or touch. Create a cleaning schedule to ensure items are regularly cleaned.

NOTE: Dry storage area was neat & well organized. Good separate storage of chemicals below/away from foods. Remember to ensure all food contact surfaces, utensils, and containers such as drink blender are washed, rinsed, sanitized, & air dried at least every 4 hours of use. An employee health policy (1-B) was left and explained.

NOTE: Remember to ensure all coolers have a working thermometer, that's visible, in the warmest part. Kitchen and dry storage area was clean and well organized.
  • Critical: Demonstration of Knowledge*
    Observation: The person in charge failed to describe the symptoms or illnesses that should be in an employee health policy.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled. VDH will mail an example of an employee health policy to firm.
  • Warewashing Equipment, Cleaning Frequency
    Observation: An accumulation of grime and old food particles were observed on the interior surfaces of the mechanical warewashing machine-- this may decrease the effectiveness of the unit.
    Correction: Increase the frequency of cleaning of the interior surfaces of the unit to ensure the grime/old food particles and odor is not in the dishwasher .
  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing*
    Observation: When tested, no sanitizer was observed at the dish machine (0 ppm).
    Correction: Call for maintenance to ensure the dish machine is properly dispensing sanitizer (50-100 ppm chlorine). Immediately begin using three-compartment sink to wash, rinse, and sanitize.

Ordered 2 southwest salads with southwest dressing. Got home and had no dressing for the salads. Not a busy time so order should have been correct. If I have to double check my order before leaving, I tend not to return to that location.
