Egg patties were found without date marking. Don't forget them. Discussed cooling meatballs. Cool from 135 F to 70 f within 2 hours then to 41 F in 4 more hours. Do not cover. Divide meatballs into shallow pans. Verify your procedure. Employee health discussed. Permit can be issued.

    Correction: Thaw in refrigerator. PIC returned to refrigerator.

    Observation: Meatballs found at 124 F.
    Correction: Distribute heat by stirring. PIC turned unit up. Heat new meatballs to 135 F. Hold at 135 F. Reheat leftover meatballs to 165 and hold at 135 F.

    Observation: Cabinet under front handsink found soiled.
    Correction: Clean.

Post a NO SMOKING sign. I did not see anyone drink during my visit but I did notice cups without straws. Personal drinks to have lids and straws. PIC knew symptoms of food related illnesses. Please review with all workers. Permit issued.

    Observation: Wiping cloth sanitizing solution is less than 150 ppm.
    Correction: Change more frequently.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Undercounter refrigerator is not working.
    Correction: Repair.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: cabinet under handsink.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Rinsing Procedures
    Observation: A distinct, separate water rinse after washing and before sanitizing of utensils and equipment was not observed.
    Correction: A 3-step washing, rinsing, and sanitizing procedure must be observed and properly utilized.

    Observation: The carbonator for the soda fountain machine did not have an adequate backflow prevention device in place to prevent contamination of the potable water lines
    Correction: Provide adequate backflow prevention devices upstream of the carbonator and downstream from any copper in the water supply to prevent contamination.

    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: TCS food (philly steak meat in paper boats) stacked over the cold line in prep table is 54°F.
    Correction: Employee moved top layers of meat to another container and placed in reach in cooler.

    Observation: Vinyl tile in facility work areas is in poor condition and no longer easily cleanable.
    Correction: Replace floor in work areas of this facility during the remodel planned for later this year.

    Observation: Observed a partially eaten cookie and an open cup on a prep table.
    Correction: PIC corrected by discarding. Employees are not to eat in kitchen/prep areas and only drinks in a covered cup with a straw may be consumed in work areas.

Good handwash practices. Good facility sanitation. Note: employee stated that owner has been informed of problems with automatic sanitizer dispenser and will fix dispenser. Sanitizer can be hand measured and manually added to sink if necessary. Annual permit issued.

    Observation: Spray bottle used for water only has visible residue inside bottle.
    Correction: Corrected by cleaning and sanitizing bottle. Clean and sanitize non TCS food containers as often as necessary to prevent accumulation of residues on/in them.
  • Lighting, Intensity
    Observation: <10 foot candles of light in walk-in refrigerator.
    Correction: Repair light fixture and provide 10 foot candles or more of light.
