Manager to review reheating practices since this was a repeat issue. Also, please review proper cooling of meatballs. This is a lot more difficult than just placing pan in walk in and leaving for the night. Quick cooling is necessary. This store shares space with Fas Mart. Fas Mart employees to understand that chemicals should not be stored with food supplies. Also ice dispenser to be cleaned and sanitized. Permit issued.

Observation: Coffee with no straw found in kitchen.
Correction: Personal drinks to have lids and straws. PIC discarded.

Observation: Meatballs were found 55-75 F in steam table. Apparently these were not heated to 135 F or higher.
Correction: Worker returned to microwave and reheated to 170 F. You must use your thermometer when heating in microwave to ensure all parts are at the proper temperature you are seeking. Workers to know the temperatures not just a number on the microwave. Stirring is needed to distribute heat since microwaves heat unevenly.

Observation: Leak under 3-c sink.
Correction: Repair. PIC has placed a work order on sink.

PIC knew symptoms associated with foodborne illness. Note: Relocate chemicals from shelf above prep sink. Clean ice dispenser at drink station and sanitize ice chute. Recommend shortening gray hose from chemical box above mop sink.

Observation: Meatballs were removed from refrigerator and placed on steam table. These were found at 64 degrees.
Correction: Do not remove from refrigerator until you are prepared to reheat in microwave. PIC removed meatballs to properly reheat.

Observation: Cardboard boats stacked high with chicken strips. Chicken was 45.7 degrees.
Correction: PIC removed a few layers. Do not overfill. Maintain 41 degrees or below.

Correction: Cover.

Observation: Hose at mop sink falls into flood level of mop sink.
