09/25/2014Risk Factor
At time of evaluation, EHS observed internal food temperatures in walk-in cooler to be greater than 41*. It was determined that the walk-in fan was not and in speaking with the CFM, the unit undergoes defrost at least 2 times/day. Unit may have been in defrost at time of visit. Fan unit did cut on and ambient air measured at 38*--EHS could feel fan blowing. Ensure tuna salad is being cooled properly after preparation--must cool to 41* within 4 hours. I mention this since one of the containers was observed at 43-44* but this could also be because the containers are stored at the front of the unit (i.e. warmest part).

    This incudes tomatoes which temperature increases as they are rinsed and sliced and put into containers and returned to refrigeration units . Tuna at 11:40 was 54 degrees . Advised CFM that I was putting the container ( numerous customers had him occupied ) to rapidly cool . Recommend use of freezer to rapidly chill product . ANY product in the cooling phase may be uncovered in either walk in refrigeration or walk in freezer unit .
