    Observation: Food employees are not informed of their responsibility to report to their PIC information concerning their health and activities as they relate to diseases transmitted through food.
    Correction: Facility does have approved employee health policy but staff are not aware of reportable illnesses. PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food. Suggested posting a sign or policy where employees can easily reference.

    Observation: Facility lacks a registered Hampton Certified Food Manager (CFM).
    Correction: At least one full time employee shall register food safety certificate (Serv Safe, National Registry of Food Safety Professionals, or equivalent) with the Hampton Health Dept ($10 fee). Post the Hampton certificate in public view.
  • Food Storage - Clean and Dry Location
    Observation: Food stored in splash contamination area of hand sink.
    Correction: Install a splash guard at the hand sink to prevent splash contamination of food.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Egg salad sandwich (internal temperature observed at 59*) and other potentially hazardous/time-temperature control for safety (PHF/TCS) foods (surface temp 58-60*) are cold holding at improper temperatures in the open air cold case at front counter.
    Correction: Manager stated this unit was stocked within 30 minutes prior to EHS arrival. Corrected by relocating contents to freezer and other refrigeration to rapidly cool to 41* or below. Cold hold PHF/TCS foods at or below 41*. Manager stated this unit has been having holding issues and work order has been placed--awaiting part for permanent fix.
  • Cooling, Heating, and Holding Capacities
    Observation: Open air case at front counter is currently not capable of cold holding PHF/TCS foods at or below 41*. Ambient air measured 58-60*.
    Correction: Discontinue storing PHF/TCS foods in this unit until it has been repaired/serviced and is capable of cold holding at or below 41*. Non-PHF/TCS foods may remain in unit.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: 1) End caps missing on poles supportine tiered rack below the right drainboard of the three compartment sink.
    2) Reach-in refrigerator door gasket is torn.
    3) Shelf is chipped/scored/damaged where glasses and mugs stored.

    Correction: Maintain equipment in good repair and proper adjustment.
  • Kitchenware and Tableware
    Observation: Unwrapped wooden stir sticks were provided at the consumer self-service counter.
    Correction: Provide wrapped stir sticks or an approved dispenser for stir sticks at the consumer self-service counter to prevent consumer contamination of multiple stir sticks.
  • Physical Facilities in Good Repair
    Observation: 1) Ceiling tile missing above convection oven.
    2) Sections of cove molding missing below three compartment sink.
    3) Grout eroded at floor tile right of door into kitchen.
    4) Base tile/coving missing at base of divider/partition at mop sink and the surface of that wall/divider is scored/pitted.

    Correction: Maintain the physical structures in good repair to facilitate cleaning, maintenance, and to eliminate potential pest harborage conditions.
  • Critical: Toxics - Separation of Toxics (corrected on site)
    Observation: Chemical spray bottle stored on rack at front counter directly above packaged food.
    Correction: Corrected by relocating. Store chemical spray bottles separate and BELOW food and food contact surfaces.

    Observation: 3 staff persons have taken and passed food manager certification program but no one has registered as required by Hampton City Code as a City of Hampton certified food manager
    Correction: left flyer with manager on duty as to registration of course completion certificates to become City of Hampton certfied food manager . The issued certificate must be posted in public view

    Correction: cannot be stored in fhe floor or on / over work surface . Recommend on lower shelving of a piece of equipment OR provide a wiping cloth caddy
